Spinach Artichoke Egg Rolls
Ingredients
  • 1 10 ounce bag frozen spinach, thawed and drained
  • 1 can artichoke hearts, chopped
  • 4 ounces cream cheese, softened
  • ⅓ cup mozzarella cheese, shredded
  • ¼ cup sour cream or plain greek yogurt
  • ¼ cup mayonnaise
  • 2 cloves garlic, minced
  • dash pepper
  • dash salt
  • 11 to 13 egg roll wrappers --I used 12
  • 2 to 3 cups vegetable oil -about 2 inches deep in pot
  • 2 TBS grated parmesan cheese
  • 1 TBS parsley chopped
  • small bowl of water
