Holley's Basic Cake Recipe

Ingredients
  • 1¼ cups Water (can also use juice, milk, Irish Cream, etc.)
  • ¼ cup Oil
  • 4 LG Eggs
  • ⅓ cup Sour Cream (or yogurt, mayonnaise, applesauce, etc.)
  • 1 tsp Vanilla (or any flavoring you like)
  • 1 box Cake Mix, any flavor (works best with Betty Crocker or Duncan Hines)
  • 1 small box Pudding Mix, any flavor, instant or cook and serve type
  • If at high altitude (over 2500 ft) add ¼ cup Flour
Steps
  1. 1. Preheat oven to 350° (325° for high altitude).  You may need to adjust oven once you learn how it bakes - every oven is a bit different).
  2. 1B.  If you are making cupcakes, set oven to 400° (375° for high alt.)
  3. 2. In a large mixing bowl, combine all ingredients, mixing at low speed just until all ingredients are wet (about 30 seconds), then beat at medium speed for EXACTLY 2 minutes.
  4. 3. Coat pans (2 x 8 inch rounds) with a cooking spray containing flour such as Bakers Joy or Pam Baking Spray. Then line only the bottom with waxed paper cut slightly smaller than the pan. Then coat the waxed paper with same spray, making sure the bottom corner and sides are coated well.
  5. 4. Pour batter into pans and give each pan a few good slams on the counter to bring up any bubbles and ensuring that batter gets into corners.
  6. 5. Bake until center is done, about 40 minutes, testing with wooden toothpick (there should be no wet batter on the toothpick) and edges should be just starting to shrink away from sides of pan.
  7. 6. Cool completely, wrap with plastic wrap and chill overnight before trying to fill and frost.
