Ground Beef Noodle Soup
Ingredients
  • 2 cups egg noodles, or whatever pasta you desire. (I used papparedelle, because I love them) 1 Tbls olive oil 1 medium onion, diced 1 cup celery, diced 1 cup carrots, diced 2 cloves garlic, minced (I was lazy and used jarlic) 1 lb hamburger (I used lean) ½ tsp each (oregano, basil and season salt) Salt & Pepper to taste 1 envelope of dry onion soup mix 3 cups beef stock 28 oz can of diced tomatoes 8 oz can tomato sauce 1 Tbs. soy sauce ¼ cup shredded parmesan Cook noodles to a little less than al dente, drain and reserve. Heat olive oil in a large pan. Add onion, celery, carrots. Cook until softened. Add garlic and cook another minute. Add hamburger, cook and drain fat. Stir in oregano, basil and seasoned salt. Add Salt & Pepper to taste. Add broth, onion soup, tomatoes, tomato sauce and soy. Bring to a boil and lower temperature and simmer for 15 minutes. Add noodles and simmer another 5 minutes. Top with Parmesan cheese.
