Ingredients
  • 8 cups (760 g) leeks, thinly sliced
  • 3 tbsp (45 ml) olive oil
  • 2 garlic cloves, chopped
  • 1 tsp ground cumin
  • 1 cup (250 ml) chicken broth
  • 4 cups (100 g) baby spinach
  • 1 cup (45 g) mixed herbs, finely chopped (such as dill, mint, parsley, basil and cilantro)
  • 4 to 8 eggs (see note)
  • 1 ½ tsp (7.5 ml) harissa
  • 1 ½ tsp (7.5 ml) lemon juice
  • 1 ½ tsp (7.5 ml) water
  • 1 green onion, chopped
