Jj Johnson's Greek-Style Rice with Spinach and Feta
Ingredients
  • ¼ cup extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • ¼ cup fresh lemon juice (from 2 lemons)
  • 2 large garlic cloves, minced
  • 1 tsp. kosher salt
  • ¼ tsp. freshly ground black pepper
  • 2 large scallions, sliced (about ½ cup)
  • 1 Tbsp. finely chopped fresh dill (from 1 bunch)
  • 1 cup uncooked long-grain white rice, rinsed
  • 1½ cups water
  • 8 oz. baby spinach or spinach leaves, coarsely chopped
  • 2 Tbsp. toasted pine nuts
  • 1½ oz. feta cheese, crumbled(about ⅓ cup)
  • Chopped fresh flat-leaf parsley, for serving
