Teriyaki Chicken and Broccoli
  • 9 oz boneless skinless chicken breasts
  • 1 tablespoon of cooking oil (neutral such as avocado or canola oil)
  • 1 teaspoon garlic (minced)
  • 1 small hot chili pepper (optional) (I like to use 1 to 2 bird's eye chilis)
  • 1 cup fresh broccoli florets
  • ¼ teaspoon fresh ginger root (minced)
  • ½ cup of teriyaki sauce (gluten free and low sodium) (divided)
  • 1 to 2 tablespoon scallions (sliced thin + more for garnish)
  • 1 cup cooked rice for serving
