  • ¾ cup heavy cream
  • ¾ cup whole milk
  • ¼ teaspoon black pepper
  • 3 large eggs
  • 2 oz Gruyère, coarsely grated (1 cup)
  • Special equipment: a 9 ½-inch deep-dish pie plate
