Cottage Pie Bowls
Paleo beef dinner

Ingredients
  • 1Tbl olive oil
  • 1lb ground beef
  • 1cup diced onion
  • 2 cloves garlic,minced
  • 2 large carrots,peeled and diced
  • ½ green bell pepper,diced
  • 1tsp dried thyme
  • 1tsp rosemary
  • 1tsp sea salt
  • 1Tbl coconut amino
  • 2tbl tomato paste
  • 1 cup beef or chicken stock
  • 1tsp arrowroot powder
  • 1Tbl water
  • Parsley-optional
  • Make cheesy mashed potatoes with it.
Steps
  1. Heat the olive oil in large skillet over medium heat. Add the ground beef,onion and garlic. Cook 3 to 4 min using a spoon to break it up. Of serving potatoes start a pot to boil and begin cooking them as well.
  2. While the ground beef is browning chop your carrots and green peppers. Add them to the skillet and stir. Add thyme,rosemary,salt,coconut amino and tomato paste. Stir everything together well and then pour broth into the skillet.
  3. Mix the arrowroot powder and water together in a small bowl to create a slurry. Bring the meat mixture to a boil and pour in the slurry. Reduce the heat to medium-low and cover the skillet. Let it cook for about 10 min or until carrots are tender.
  4. Serve over mashed potatoes with parsley if desired.
Notes
  • If you wish to make low carb then serve over garlic cauliflower mash.
