  • 4 inch piece of ginger, sliced (about 2 ounces; 60g)
  • ΒΌ cup grated palm sugar or light brown sugar (2 ounces; 60g)
  • 4 teaspoons kosher salt (.5 ounce; 16g)
  • 2.5 pounds chicken wings (1.1kg)
