GF no oil pop tarts

Ingredients
- Very Berry Pop-tarts
- (Gluten and Oil Free)
- 1 ½ cup gluten-free flour (I used Bobs Red Mill All purpose, but other kinds should work just fine.) (Want to use oat flour check out the link at the bottom!)
- ½ cup tapioca flour
- ¼ heaping cup maple, date or whatever coarse unrefined dark sugar you choose (the original recipe uses coconut sugar which works great too!)
- 2 ripe bananas (chilled overnight in the fridge)
- ½ tsp of baking powder
- 1 tsp vanilla extract (optional, I didn’t need any)
- 1 batch of blueberry jam
- My Quick Blueberry Jam! (I mixed this with strawberry jam when I ran low on the video)
- Approx 1½ cups blueberries (I used frozen blended a cup and then add the ½ cup and pulsed it to make the jam chunky.)
- ½ cup of water
- 2 to 3 tbsp of orange juice or zest
- 8 to 12 dates
- 1 tbsp of tapioca starch
- Blend ingredients. Cook add tapioca starch, continue cooking and stirring until thickened, then refrigerate.
- INSTRUCTIONS
- In a large mixing bowl, combine the GF flour, tapioca flour, coconut sugar, baking powder, and vanilla.
- Add in the chilled banana and use your hands to cut it in and knead until you have a ball of slightly sticky dough. You may need to add a few more tablespoons of flour if it is too sticky.
- Chill the dough for 2 to 4 hours if possible.
- Roll it out on parchment paper (use the same paper to cook with)
- Cut the dough into a rectangle or shape pieces of dough into rough square/rectangles into about 8 total. Place jam on the first rectangle and then place the second piece over it and then seal/pinch the edges closed. Go back over the pop tarts to shape them and then crimp the edges with a fork. Form 4 poptarts.
- Bake for 20 minutes at 350F.
- Frost them if you like, I drizzle on a oil free,sugar coconut glaze, on a few, but ended up enjoying the plain ones just as much! Enjoy!
