Warm Lentil and Potato Salad Is Your New Fave Weekday Meal
Ingredients
  • large shallots, 1 halved, 1 finely diced ( 2 )
  • sprigs of thyme ( 4 )
  • small bay leaf ( 1 )
  • small bay leaf ( 1 cup )
  • Salt and pepper
  • fingerling potatoes ( 1 pound )
  • red wine vinegar ( 2 tablespoons )
  • garlic cloves, minced or smashed to a paste (I use less) ( 1 to 2 )
  • smooth Dijon mustard ( 1 tablespoon )
  • your favorite olive oil ( ¼ cup )
  • capers, rinsed if salted, drained if brined, and roughly chopped ( 2 teaspoons )
  • cornichons or other sour gherkins, roughly chopped ( 2 tablespoons )
  • scallions, thinly sliced ( 1 to 2 )
  • chopped flat leaf parsley ( ½ cup )
