Cornbread Dressing/ Oyster Dressing
Ingredients
  • °Cornbread
  • °Bread/buns/biscuits (stale is good)
  • °Finely chopped celery
  • °Finely chopped onion
  • °Chopped gizzards and hearts, precooked
  • °Chopped/diced boiled eggs
  • °Pepper, ground sage
  • °Optional: Oysters
  • °Broth (chicken broth and lots of butter)
Steps
  1. Crumble cornbread. Add chunks of bread, small medium size. Mix with hands. Should be a good mix of the 2, with a little more bread.
  2. Add celery, onion, gizzards. Mix by hand, should be a good colorful mix.
  3. Mix in broth a little at a time until nice and moist. Taste and adjust ingredients. Add oysters if using.
  4. Place gently in dish and don't pack down. Ladle more broth on top before baking. Cover with tin. Bake until hot.
