Caramelized Onion Butternut Squash Soup
Ingredients
  • 1 medium onion, diced
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cups bone broth, unsalted (chicken, beef, or pork)
  • 2 to 2 ½-pound butternut squash, peeled and cut into 1 ½-inch cubes (about 4 cups)
  • ¼ to ½ tsp pepper
  • Salt to taste (2 ½ teaspoons Himalayan pink salt)
