AN AMAZING TOPPING FOR BREAD/TOAST, CRACKERS, OR ANYTHING ELSE LIKE A STEAK, CHICKEN FILLET ETC

Ingredients
  • 1 tomato, finely chopped
  • 1 onion (red, brown, white or spring onions), finely chopped
  • ⅓ cup green pimento-stuffed or kalamata olives, sliced
  • 50g fetta, crumbled
  • Lemon juice
  • Salt & cracked pepper
  • ½ cup flat-leaf parsley and/or basil
Steps
  1. Place the tomato, onion, olives, fetta, lemon juice, salt & pepper in a bowl and gently toss to combine.
  2. Sprinkle this topping onto whatever base you like - either bread (fresh or toasted), crackers or even meat like steak, chicken fillets etc.
  3. Top with finely chopped parsley just before serving.
  4. Delicious!
Notes
  • Adding finely chopped cucumber and/or avocado is also amazing.
