Spaghetti Squash with Chickpea Tomato Sauce (Oil-Free, Vegan)
Ingredients
  • 1 spaghetti squash (approx. 3lbs)
  • ¼ cup red onion, finely diced
  • 1 Tbsp minced garlic
  • 2 Tbsp balsamic vinegar
  • 1 x 15oz can fire roasted diced tomatoes
  • 1 Tbsp tomato paste
  • ½ tsp liquid aminos (or low sodium soy sauce)
  • 1 tsp coconut aminos
  • 1 Tbsp italian seasoning
  • ½ Tbsp basil
  • ½ Tbsp oregano
  • ½ tsp smoked paprika
  • Very small dash of cayenne pepper
  • 1 x 15oz can garbanzo beans (drained & rinsed)
