One Pot Greek Chicken and Rice
Ingredients

  • 600 g boneless chicken thigh fillets (approximately 5 to 6 chicken thighs, see note 1 for alternatives)
  • 1 tsp garlic, freshly minced
  • 1 tbsp oregano
  • ½ tsp sweet paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 3 tbsp lemon juice, plus the zest of one whole lemon
  • 2 tbsp olive oil

  • 1 brown onion, finely diced
  • 1 tsp garlic, freshly minced
  • 1.5 cups white rice (jasmine or basmati)
  • 3 cups chicken stock
  • 2 cups spinach leaves, roughly chopped (see note 2 for substitutions)
  • ½ tsp black pepper
  • 1 tbsp fresh parsley or oregano, finely chopped
  • Fresh lemon slices and lemon zest, to serve (optional)
  • Feta cheese, to serve (optional)
