Marion's Best Chop Suey
Ingredients
  • 500g (1 lb) pork fillet or tenderloin
  • vegetable oil, for cooking
  • 2 eggs, lightly whisked
  • 1 brown onion, roughly sliced
  • 3 garlic cloves, finely chopped
  • ½ carrot, thinly sliced
  • ½ capsicum, cut into bite-size pieces
  • 200g (7 oz) green cabbage, roughly chopped
  • 100g (3.5 oz) shiitake mushrooms, stems removed and discarded, thinly sliced
  • 100g (3.5 oz) bean shoots
  • 1 tbsp cornflour (cornstarch), mixed with 2 tbsp water
  • finely sliced spring onion (scallions)
  • subheading: Marinade:
  • ½ tsp bicarbonate of soda (baking soda)
  • 2 tsp cornflour (cornstarch)
  • 1 tsp soy sauce
  • subheading: Stir-fry sauce:
  • 3 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 2 tbsp Chinese Shaoxing wine
  • ½ tbsp dark soy sauce
  • 1 tsp sugar
  • 1 chicken stock cube
