Peperonata (Stewed Bell Peppers)
Ingredients
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large yellow bell pepper, or 2 smaller ones
  • 1 medium onion, white or red
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 pinch salt, more to taste
  • 2 cups tomato passata
  • black pepper, to taste (optional)
  • a handful of fresh basil leaves, optional
