Instant Pot Creamy Sausage Tortellini Soup

Ingredients
  • olive oil
  • 1 lb. Italian sausage
  • ½ medium onion, diced
  • 1 heaping tsp garlic, minced
  • 2 8.8 ounce packages tortellini (vacuum sealed)
  • 2 15 ounces cans fire roasted diced tomatoes
  • 1 8 ounce can tomato sauce
  • 6 cups hot water
  • 1 tsp basil
  • 1 tsp Italian seasoning
  • 1 tsp oregano
  • salt and pepper to taste
  • 1 cup heavy whipping cream or half and half (use more or less if you'd like)
  • shredded parmesan cheese (optional)
Steps
  1. Add olive oil and sausage to the pot and start to brown on Saute.  About halfway through, add onion.  Add garlic at the end and saute for another minute, then turn off the Instant Pot.  Drain grease if necessary.
  2. Add tortellini, diced tomatoes,  tomato sauce, water and seasonings.  Cook on manual for 2 minutes, natural release for 4 to 5 minutes and then quick release the remaining pressure.
  3. Add cream and stir.  Top each bowl with shredded parmesan cheese if desired and serve.
Notes
  • You can easily halve this recipe.  I made it as is in a 6 quart Instant Pot.
  • I highly recommend using hot water (I preheat in the microwave) so that it doesn't take forever to pressurize since there's so much liquid in this recipe.
  • If using dried tortellini, cook half the time on the box.  If using frozen tortellini, cook 0 minutes.  Follow the release directions in the recipe.
