Garlic cauliflower potato mash
Ingredients
  • 3 pounds red potatoes, cut in quarters
  • 1 pound riced cauliflower, steamed ( used costco bag, steamed in microwave)
  • 6 cloves garlic
  • ½ to 1 cup soaked cashews ( I soak in hot potato water while potatoes are cooking)
Steps
  1. Boil potatoes and garlic until tender, drain
  2. Blend cauliflower, cashews, and as much water as needed to make a thick cream
  3. Mash potatoes and garlic, adding and mashing in the cauli-cashew cream
  4. Salt and pepper to taste
