  • 1 tablespoon olive oil
  • ¼ of an onion, diced
  • 16 ounces “riced” cauliflower
  • ½ teaspoon salt
  • 1 teaspoon coriander
  • zest and juice from half a small lime
  • ¼ cup cilantro
