Chicken in Red Wine Vinegar Sauce
Ingredients
  • 2 pounds ( 900 g) bone-in, skin-on chicken thighs (about 6)

  • 2 tablespoons ( 30 ml) extra virgin olive oil
  • 1 shallot, thinly sliced
  • 1 tablespoon ( 15 g) finely chopped garlic
  • ½ cup ( 125 ml) dry white wine
  • ¼ cup ( 60 ml) red wine vinegar
  • 3 tablespoons ( 45 g) tomato paste
  • 1 tablespoon ( 15 g) Dijon mustard
  • 1 tablespoon ( 15 g) chopped fresh thyme
  • 2 small bay leaves
  • ¼ cup ( 60 ml) water or chicken broth
  • ¼ teaspoon crushed red chili flakes, optional
