Huli-Huli Chicken Thighs
Ingredients
  • 2 cups (16 ounces) pineapple juice
  • ⅔ cup low-sodium soy sauce
  • ⅔ cup ketchup
  • ½ cup packed dark brown sugar
  • 1 ½ teaspoons crushed red pepper flakes
  • 4 cloves garlic, minced
  • One 2-inch piece fresh ginger, peeled and minced (about 2 ½ tablespoons)
  • 3 pounds boneless, skinless chicken thighs (about 12 thighs)
  • Vegetable oil, for the grill grates
  • 1 pineapple, cut into 1-inch-thick spears
  • 2 tablespoons extra-virgin olive oil
  • 3 scallions, thinly sliced
