Skinny Sweet and Sour Pork (Weight Watchers)
Ingredients
  • 1 lb pork tenderloin , trimmed of all visible fat and cut into ½ inch cubes
  • 2 tbsp corn starch , divided
  • 1⁄3 cup water
  • 1⁄4 cup rice vinegar
  • 1⁄4 cup white sugar
  • 3 tbsp ketchup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp canola oil
  • 1 tbsp fresh ginger , peeled and minced
  • 2 clove garlic , minced
  • 1 bell pepper , seeded and cut into ½ inch pieces
  • 1 can (8 oz) pineapple chunks , juice drained
