Mediterranean Pesto Pork and Vegetable Tray Bake

  • 80g thinly sliced pancetta
  • 1 baby fennel, fronds reserved
  • 2 tbsp lemon juice
  • 1 tsp brown sugar
  • 125g (½ cup) créme fraiche
