Okinawa Soba 沖縄そば
Ingredients
  • subheading: For the Pork Broth:
  • 14 oz pork belly block
  • 4 cups water (for pre-boiling the pork belly)
  • 6 cups water (for the pork broth)
  • subheading: For the Katsuo Dashi:
  • 2 cups water
  • 1 cup katsuobushi (dried bonito flakes) (packed)
  • subheading: For the Soup Broth:
  • 1 Tbsp Diamond Crystal kosher salt
  • 2 tsp soy sauce
  • subheading: For the Stewed Pork Belly:
  • 2 Tbsp black sugar (I used  dark muscovado sugar; you can also purchase  Okinawan black sugar on Amazon; or use dark brown sugar in a pinch)
  • 2 Tbsp awamori (Okinawan distilled liquor)
  • 2 Tbsp soy sauce
  • 2 Tbsp water
  • subheading: For the Okinawa Soba:
  • 2 servings Okinawa soba noodles
  • 1 to 2 green onion/scallion
  • fish cakes ( Satsuma Age)
