  • Kosher salt and freshly cracked black pepper to taste
  • A drizzle of olive oil (1 tsp)

  • 3 roma tomatoes , deseeded and diced
  • 2 english cucumbers , diced
  • ½ red onion , peeled and finely chopped
  • ½ cup pitted Kalamat olives
  • ? cup feta cheese
  • Salt and pepper
