  • 1 inch piece of fresh ginger, peeled and finely minced
  • 1 cup frozen vegetable medley
  • 2 teaspoons curry powder
  • 1 14 oz. can full fat coconut milk
  • 2 teaspoons tapioca starch
  • 3 tablespoons minced fresh cilantro
  • kosher salt and freshly ground black pepper, to taste
  • 1 head cauliflower
