Baked Black Bean Taquitos
Ingredients
  • 2 cans (14 oz. each) black beans, drained and rinsed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp. paprika
  • ½ tsp. cumin powder
  • ¼ tsp. salt or to taste
  • ¼ tsp. pepper or to taste
  • 1 cup vegetable broth
  • 1 ½ tbsp. lime juice
  • ¼ cup cilantro, chopped
  • 1 tbsp. plant butter (or regular butter)
  • 12 6-inch flour tortillas
  • 2 tbsp. olive oil for brushing
