Black Bean, Corn and Quinoa Enchilada Bake
Ingredients
  • ½ cup uncooked quinoa
  • 1 teaspoon olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • ¼ teaspoon salt, plus more to taste
  • ½ teaspoon dried oregano
  • 1 (15 oz) can Muir Glen organic tomato sauce
  • ¾ cup water
  • 1 (15 oz) can Muir Glen organic fire-roasted diced tomatoes, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can sweet corn, drained
  • ¼ cup finely chopped cilantro, plus extra for garnish
  • 1 ½ cups of shredded colby jack or mexican cheese
