Instant Pot Ginger-Scallion Noodles (Cantonese Pesto)
Ingredients

  • 3 cups vegetable or garlic broth (e.g. Garlic Better Than Bouillon)
  • 1 pound spaghetti

  • 4-inch knob of ginger, peeled and roughly chopped
  • 1 bunch scallions, sliced and roughly chopped
  • ⅔ cup vegetable oil
  • 2 teaspoons low-sodium soy sauce, tamari or coconut aminos
  • ½ teaspoon kosher salt
