Ingredients
  • 1 block extra firm tofu
  • 1 cup bread crumbs
  • ½ cup all purpose flour
  • ½ cup water
  • ¼ cup neutral oil for frying
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1 ½ tsp garlic salt
  • 12" baguette, halved for two sandwiches, or two separate rolls
  • 1 cup marinara sauce
  • 1 cup vegan mozzarella
  • 1 cup arugula (optional)
Steps
  1. Press tofu and make three vertical cuts. Flip it onto its side and cut vertically twice. This should make 16 equal pieces.
  2. In a small, flat bowl or dish, mix bread crumbs with spices and garlic salt.
  3. In another small, flat bowl, mix together water and flour.
  4. Preheat the oven to 400°F.
  5. Take a slice of tofu, dip it in the water/flour mix and then into the bread crumbs. Set aside. Do this with all the slices of tofu.
  6. Add the oil to a pan and heat up. Fry each slide of breaded tofu for about a minute on each side.
  7. Slice the bread in half. Cover the inside with sauce and add some cheese. Add the tofu, but do not close the sandwich if you'll be adding arugula.
  8. Place in the oven until cheese starts to melt and bread is toasted, about 5 minutes.
  9. Remove from the oven and add arugula if desired.
