Baked Morels with Garlic Butter (Escargot)
Ingredients
  • 1 lb large blonde morels
  • ½ cup breadcrumbs lightly toasted, preferably sourdough
  • 1 oz wild chervil parsley, or another mild herb, like chervil or cilantro
  • 1 stick unsalted butter at room temperature
  • ¼ teaspoon fresh ground black pepper
  • Tiny pinch of ground caraway fresh ground only, optional
  • ½ teaspoon salt
  • 1 small clove garlic
  • A few gratings of fresh lemon zest and a dash of juice
