  • 2 bay leaves
  • 4 garlic cloves, smashed
  • 2 Tbsp tomato paste
  • 3 Tbsp all purpose flour
  • 3 cups light red wine, like a Pinot Noir
  • 1 lb crimini mushrooms, quartered
  • 3 sprigs of fresh thyme
