Vegetable Gratin and Bacon Crumb
Ingredients
  • 800g sweet potatoes, peeled & thinly sliced on a mandolin
  • salt & pepper, to taste
  • 400g medium potatoes, peeled & thinly sliced on a mandolin
  • 200g parsnips, peeled & thinly sliced on a mandolin
  • 1 cup chicken stock
  • 1 tsp olive oil
  • 300g fully trimmed bacon, diced
  • 2 thick (70g) slices day-old sourdough bread, torn into breadcrumbs
  • 1⁄4 tsp dried thyme (or1⁄2 tsp fresh thyme leaves)
