Vegan Zucchini Muffins with Lemon & Poppy
Ingredients
  • ½ cup almond or soy milk
  • 1 tablespoon apple cider vinegar
  • 1½ cups whole-wheat flour
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • Juice and zest of one lemon about 2 tablespoons lemon juice and 1 tablespoon of zest
  • ½ cup coconut sugar or organic cane sugar
  • ¼ cup coconut oil melted
  • ½ teaspoon vanilla extract
  • 1 cup grated zucchini packed (about 1 zucchini)
