Vegan Hoppin' John Sweet Potato Shepherds Pie
Ingredients
  • 4 to 6 cups leftover Hoppin' John stew
  • 1 ½ cups cooked sweet potatoes
  • 1 ½ cups cooked white potatoes
  • ½ cup unsweetened plant milk
  • ½ tsp paprika
  • ⅛ tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ to 1 tsp salt or to taste
  • ½ tsp pepper
  • 1 tbsp vegan butter optional
Steps
  1. Spread leftover Hoppin' John stew in a medium to large baking dish.
  2. Mash all remaining ingredients together until smooth and well incorporated then spread over the top of leftover Hoppin' John stew.
