  • 2 cups cooked quinoa
  • 1 ½ cups chopped apples (Honeycrisp, Gala, or Fuji are my favorite)
  • ⅓ cup dried cranberries
  • ⅓ cup crumbled goat cheese (can use feta cheese)
  • ½ cup chopped walnuts
  • Kosher salt and black pepper, to taste
