ErinLW Tuna Salad Over Arugula

Ingredients
  • 2 cans of tuna (4.5oz each)
  • 1 tbsp lemon juice
  • ⅓ cup plain yogurt
  • 3 tbsp capers roughly chopped
  • ½ cup finely chopped red onion
  • ½ cup finely chopped pistachios or walnuts
  • ¼ cup chopped dried cranberries
  • ½ tsp salt and pepper.
Steps
  1. In a large bowl, add 2 cans of @portofinotuna (4.5oz each), mix with 1 tbsp lemon juice, ⅓ cup plain yogurt, 3 tbsp capers roughly chopped (or relish or pickles), ½ cup finely chopped red onion, ½ cup finely chopped pistachios or walnuts, ¼ cup chopped dried cranberries. mix it all together. add ½ tsp salt and pepper.
  2. Serve over a bed of arugula.
