Red Curry Noodles and Chicken
Ingredients
  • 3 tbsp avocado or olive oil
  • 1 ½ lbs boneless skinless chicken thighs ½ tsp salt ½ tsp black pepper to season
  • 10 oz stir-fry rice noodles, cooked according to package instructions
  • 1 yellow onion, diced
  • 3 to 4 garlic cloves, minced
  • 1 tbsp ground ginger
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 to 3 tbsp thai red curry paste (depending on spice preference)
  • 2 tbsp coconut aminos
  • 2 tsp fish sauce
  • 13.5 oz can full-fat coconut milk
  • chopped cilantro & green onion for topping
