Simple Baked Cod with Tomatoes & Basil
Ingredients
  • 3 tablespoons olive oil
  • 2 cups cherry or grape tomatoes
  • 1 ¼ lb cod fillets  4 to 6 pieces ( 1 inch thick or more) see notes
  • salt, pepper and chili flakes to taste
  • 1 lemon - zest (set aside) and slices
  • 3 garlic cloves rough chopped
  • ¼ cup basil leaves torn
