Hearty Slow Cooker Beef Stew
Ingredients
  • 2-pound chuck roast, cut into bite-sized chunks
  • 1 cup of all purpose flour
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • ½ teaspoon dried basil
  • ¼ teaspoon paprika
  • 1 teaspoon kosher salt
  • ¼ teaspoon of freshly cracked black pepper
  • ¼ teaspoon Cajun seasoning (like Slap Ya Mama), or to taste
  • About ½ cup of vegetable shortening, bacon fat, vegetable or canola oil, divided
  • 2 large russet potatoes, peeled, quartered and cut into chunks
  • 2 large carrots, scraped and cut into chunks
  • 1 stalk (rib) of celery, sliced thick
  • 1 cup of sliced sweet or yellow onion
  • 2 cups of water
  • 4 cups of beef broth or stock
  • 1 tablespoon of beef base, (like Better than Bouillon), optional
  • 2 teaspoons of Kitchen Bouquet, optional
  • Hot, cooked rice, optional
