MIDDLE EASTERN CHICKEN PILAF
Ingredients
  • 3 tbs flaked almonds
  • 2 tsp olive oil
  • 500g chicken thighs-skinless diced
  • 2 onions thinly sliced into half moons
  • 1 red capsicum deseeded & sliced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1⁄2 lemon zested
  • 2⁄3 cup (130g) basmati rice rinsed
  • 1 1⁄4 cups (320ml) chicken stock
  • salt & pepper, to taste
  • 4 tsp currants
  • 1 tin of chickpeas (400g tin) drained & rinsed
  • 4 sprigs of parsley finely chopped
