  • ¾ cup ( 144g) brown sugar
  • ¼ cup ( 146g) unsulphured molasses
  • 1 teaspoon vanilla extract
  • Dry
  • 1 ½ cups ( 222g) gluten-free flour
  • ¾ cup ( 84g) almond flour
  • 2 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1 ¼ teaspoons cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • ¼ cup cane sugar, for coating cookies
  • Equipment
  • 1 large, 1 medium and 1 small mixing bowl
  • Hand mixer OR whisk
  • Baking sheets
  • Spatula or mixing spoon
  • Parchment paper or silicone mats
  • Flat bottomed cup (if not, you can use your hands)
  • Cooling rack
