[Fp] Cheesy Broccoli Cauliflower Chicken Bake
Ingredients
  • 2 lbs cauliflower florets
  • 3 broccoli crowns cut into florets
  • 5 strips of bacon
  • 2 boneless, skinless chicken breasts, cubed
  • 1 ½ cups shredded sharp Cheddar + ½ cup for topping
  • ½ cup shredded mexican style cheese blend
  • 1 ¼ cups Heavy cream
  • 4 oz cream cheese
  • ⅛ tsp garlic powder
  • ½ tsp ground black pepper
  • salt to taste
Steps
  1. Preheat oven to 375 F
  2. Start a big pot of water boiling
  3. Once the water starts boiling, add cauliflower and broccoli. Boil until crisp tender (about 5 minutes) and drain well.
  4. At the same time, start frying bacon over medium heat until crispy. Remove to paper towels to drain
  5. Once the bacon is crispy, fry the chicken bits in the bacon fat for about 1 to 2 minutes until slightly browned. Remove to paper towels to drain
  6. At the same time, start bringing the heavy cream to a simmer over medium heat.
  7. Once simmering, whisk in the cream cheese until smooth.
  8. Add garlic powder, pepper, salt, and sharp cheddar cheese. Whisk until smooth.
  9. Put chicken, broccoli, and cauliflower in a 9x13 baking dish
  10. Pour cheese sauce over and mix well. Cover with more shredded cheddar and some mexican cheese blend
  11. Chop bacon into tiny bits and sprinkle over top.
  12. Bake for about 15 minutes or until hot and bubbly
