Easy and Hearty Jambalaya Soup (Sausage, Chicken And/Or Shrimp)
Ingredients
  • 2 tbsp Olive Oil, Divided
  • 12 oz Andouille Sausage, Cut Into ¼" Rounds
  • 2 Boneless and Skinless Chicken Thighs, Cut into ½" Pieces
  • 1 Medium Onion, Chopped
  • 1 Medium Bell Pepper, Chopped
  • 1 Stalk Celery, Sliced
  • ¼ Cup Green Onions, Chopped
  • 3 Cloves Garlic, Minced
  • 2 to 4 tsp Creole or Cajun Seasoning
  • ¼ tsp Ground Thyme
  • ¼ tsp Dried Oregano
  • 6 Cups Low Sodium Chicken Stock
  • ⅔ Cup Uncooked Long-Grain White Rice
  • 1 (14.5 oz) Can Low Sodium Diced Tomatoes, Undrained
  • 2 Dried Bay Leaves
  • 12 oz Large Raw Shrimp, Peeled and De-veined
