Enchilada Fritters
Ingredients
  • 1 can of chicken breast (drained)
  • 1 shredded zucchini
  • 1 egg
  • ⅛ cup enchilada sauce
  • ½ to ¾ cheddar cheese
  • Everything but the Elote seasoning
Steps
  1. Salt and drain shredded zucchini, squeeze as much moisture out as possible.
  2. Mix all ingredient together
  3. Heat skillet with butter or oil of choice
  4. Form mix into patties and fry until crispy.
  5. Top with warmed enchilada sauce, guacamole, sour cream and green onions.
  6. *If you don’t have Everything but the Elote seasoning use seasonings like cumin, chili powder to give it a Mexican flavor.
