Ginger Lemon Honey
Ingredients
  • Fresh ginger
  • 1 lemon
  • 2 sticks cinnamon
  • 16 oz honey
  • 2 8 oz or 1 16 oz glass jar
Steps
  1. For 2 jars, split in half for each jar. Add lemon peel from a lemon (pith removed) and about 16 slices fresh ginger.   I included 2 sticks of cinnamon.  Put the ginger, lemon peel and cinnamon in the jar first.   Add honey to ½ inch from the rim.    Cover the sterile ball jar with a paper towel and a rubber band.  Put into the IP (1 cup of water w/trivet) for 15 min on manual pressure.  Then full natural release.   Let it sit to cool for a couple of hours.
