  • 1 yellow onion, cut into ½-inch dice (2 cups)
  • 16 ounces mushrooms, sliced (8 cups)
  • 6 cloves garlic, minced
  • ⅓ cup oat flour
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Italian seasoning
  • Sea salt and freshly ground black pepper, to taste
