Cauliflower cheese Bread

Ingredients
  • 1 Cup Grated Cauliflower (I still pulse mine in the food processor)
  • 1 Cup Low-Fat Mozzarella Cheese or Low-Fat Cheese blend (Divided)
  • 1 Egg or Egg substitute
  • ¼ teas. Garlic Power
  • ¼ teas Onion powder
  • pinch of salt
  • pinch of dried basil
Steps
  1. Preheat oven to 350. Mix cauliflower, ¼ cup egg/egg substitute, and ¾ cup shredded mozzarella and seasonings together in a bowl until combined.
  2. Line a 9 x5 loaf pan with parchment and lightly spray with Pam. Pour mixture into pan about 1 -½ inch deep. (It is okay if the mixture does not cover the entire pan).
  3. Bake at 350 for 30 min or until set.
  4. Lift the edges of the parchment and place bread with parchment on to cookie sheet.
  5. Carefully use a spatula to lift the edges of the dough off the parchment and flip the dough.
  6. Bake for an additional 15 minutes at 450 degrees.
  7. Take out of oven and sprinkle ¼ cup mozzarella or three cheese blend.
  8. Continue baking at 450 degrees for about 8 more minutes until cheese is melted.
  9. Serve with marinara sauce.
